Shunyamurti’s Sauerkraut with Soy Hot Dogs and Popcorn

Shunyamurti's Sauerkraut with Hot Dogs and Popcorn
In a large, non-stick skillet, heat 1/2 c. Extra Virgin Olive Oil over medium-high heat, with:
1 extra large onion, cut into half-moon slices
Sautee until the onion is soft and starting to caramelize, 10-15 minutes.
Add in 1 1/2 large sliced gala or fuji apples (or 2 medium ones). I cut the apple in half length-wise, core it, then lay each half on their side and cut into half moons again (you can use the same idea for the onions).
Sautee another 5-10 minutes with the onions until the apples turn soft, then add in:
2 bags prepared yellow sauerkraut (I use Tom Tom’s), discarding bay leaf
3 TBSP. raspberry balsamic vinegar
Sautee the mixture until the apples really “melt” into the sauerkraut and the mixture seems “dry”, without any kraut liquid. Add in:
1 c. of sweet pickle juice OR 1 c. apple juice OR 1 c. sweet wine
Cover the kraut and lower the heat to medium-low, and cook for about 20 minutes until all the liquid is absorbed. Add in about 1/4 c. honey and a few pinches of salt. Taste to make sure the salty-sweet-vinegar balance is correct to your palate, and adjust seasonings as needed.
Cover the kraut and turn off the heat.
In another non-stick pan, heat a tablespoon or two of EXVOO (olive oil) over medium-high heat and sear the soy hot dogs till golden on each side. I use about 10 soy dogs for this amount of kraut. Once they are seared on all sides, nestle them into the kraut and let sit covered until ready to serve.
When ready to serve this amazing dish, make as much popcorn as you wish. Pour the kraut-dog mixture onto a serving platter, and top with a few cups of popcorn, serving the rest of the popcorn on the side. Eat with entire jars of Dijon mustard and homemade pickles, as Sat Yogis would.
